Creme Brulee Torch Butane: A Guide In Making A Loved Dessert

One of the most favorite and well-served desserts in fine restaurants is the well-know Creme Brulee, French for “Burnt Cream”. This dessert consists a rich custard base topped with a contrasting layer of hard caramel. It is best served cold, or with the custard cold and the caramel warm.

As defined and delicious as it maybe,  you can actually make this dessert at your own home and not spend ludicrous amount of bucks in an expensive restaurant just to indulge your taste buds.

First thing you must do is to gather the right ingredients:

2 c fresh milk
1 cinnamon stick or ¼ tsp ground cinnamon
Zest of 1 orange or lemon
1 tsp vanilla extract
4 egg yolks
1 tbsp cornstarch
1 c white granulated sugar, divided

Mix the milk, cinnamon, orange or lemon zest and vanilla in a saucepan. Boil it and then lower the heat to simmer. While simmering, occasionally stir the mixture for about 10 minutes to produce the milk with flavor. Strain liquid into another saucepan.

Using a mixing bowl, whisk egg yolks together with cornstarch and ¾ c of the sugar until it has a thick mixture and becomes a light creamy yellow color (put aside the 1/4 cup remaining sugar for the topping). Slowly pour the mixture into the milk while whisking vigorously.

Setting the fire to a medium-low heat, simmer the mixture and often stirring it. Lower the heat and have the mixture simmer until it becomes thick, this  might take around 10 minutes and do not allow the mixture to boil. Equally divide the mixture among four ramekins or any heat-proof containers. Refrigerate for at least four hours or until it has set.

Just before serving: Preheat broiler for about 10 minutes. Sprinkle remaining ¼ cup sugar on top of each ramekin, distributing equally. Use your creme brulee torch butane with your portable torch and  carefully heat the tops of each Crema Catalana with the torch set on low to medium heat until sugar caramelizes. Serve immediately.
